Peanut Sesame Slaw

Slaw

  • 8oz soba/wheat spaghetti
  • 1 small purple cabbage
  • 12ish brussels sprouts
  • 4 carrots
  • 1 bunch green onions

Peanut Sesame Dressing

  • 1/2 cup peanut butter
  • 3 tbsp white wine vinegar
  • 3 tbsp tamari or soy sauce
  • 2 tbsp toasted sesame oil
  • 2 tbsp honey
  • 1 tbsp ginger
  • 2 tbsp garlic

Instructions

  • Cook noodles & set aside.
  • In food processor, combine cabbage, brussels sprouts, carrots.
  • Put together the dressing & whisk. Should be thick but drizzly. Add water if too thick.
  • Combine noodles, veggies, dressing & toss. Let it marinate for ~20 min.
  • Garnish with peanuts, cilantro, lime.
